Brine at home, eat wherever your tent is pitched.
Ingredients
1 10-12 lb Turkey
Butter, olive oil and spices
Apple Cider Brine
1 gallon apple cider
1 cup kosher salt
1/2 cup granulated sugar
Peel of 1 orange
1 cinnamon stick
1 1/2 gallons cold water
Instructions
Combine all Apple Cider Brine ingredients in a large pot and bring to boil. Once the sugar and salt are dissolved, turn off the heat and cool completely. Submerge turkey in the brine, cover, and refrigerate over night.
Remove from brine and pat dry. Rub with oil or butter and your favorite savory seasonings, wrap in heavy-duty aluminum foil several times, then place in your cooler.
Build a fire using more wood that normal and let it reduce down to coals, then place large rocks on the fire to get searing hot. Next to the fire, dig a pit 2x the size of your bird and line the bottom with the hot stones. Cover the stones with a thin layer of red-hot coals, followed by your brined turkey. Cover the turkey with remaining coals, top with a layer of newspaper, then fill the pit with a few inches of dirt. Allow to cook for 4-6 hours. Dig out. Unwrap. Feast.
