Because breakfast in bed is overrated. This recipe for Campfire Pumpkin Spice Pancakes has a little bit of pumpkin, a whole lot of spice, and just the right amount of smoke.
1 cup buttermilk pancake mix
1 cup milk
⅓ cup canned pumpkin
¾ teaspoon cinnamon
¼ teaspoon ginger
¼ teaspoon nutmeg
Oil for cooking and butter for topping
Mix all wet ingredients in one large resealable bag or bowl and all dry ingredients in another. Pour the wet ingredients into the dry by slowly whisking until just combined.
When the embers are hot, place a cast iron griddle or upside down dutch oven lid over the campfire pit. Generously coat the griddle with oil, wait for it to get hot, and pour ¼ cup of pancake mixture. Cook until brown on both sides, then serve with butter, syrup and maybe a leaf or two.
